Two tablespoons canola oil
Three garlic cloves, minced
Two tablespoons ginger, minced
1-2 jalapenos, chopped
Three large scallions, chopped, green and white parts divided
1 1/2 pounds Japanese eggplant, sliced into thin rounds
Three tablespoons soy sauce
Four tablespoons rice wine vinegar
One tablespoon sugar
One tablespoon cornstarch
To cook this out, you need to follow the directions with the measurements mentioned above. Firstly heat canola oil over medium-high heat in a large skillet. To it, you need to add garlic, ginger, jalapenos, and white parts of scallions and cook for 2-3 minutes until it turns fragrant.
Now stir in eggplant slices and cook for about 5 minutes until the eggplant has been softened.
Further to complete the recipe, you need to add soy sauce, rice, wine, vinegar, sugar, and cornstarch in a small bowl. After your eggplant has been softened, you need to pour the sauce into the pan, bring them to a boil, and stir until all the vegetables are coated.
